Middle Eastern Carrot Salad

 

Serves 8

Ingredients:

4 cups carrots, grated about 7-8 large carrots
3 Tbsp lemon juice, about 1 ½ lemons
3 Tbsp vegetable oil
½ tsp ground coriander
2 tsp chopped mint
1 Tbsp chopped parsley
2 tsp honey

Directions:
Mix all ingredients together. 

*Note: It’s best if chilled at least 1 hour before serving, but it is perfectly fine served immediately.
