Surprise Pyramid Tacos

Surprise Pyramid Tacos:
Ingredients:
1 lb turkey roll
8 corn tortillas
1 10-oz can Mexican Style Tomatoes (do not drain)
½ cup chopped onion
½ cup shredded apple (Granny Smith works well- shred the meat of the apple, not the skin)
1 Tbsp. butter
1 Taco Seasoning packet
¼ cup water
1 ½ cup shredded lettuce
1 cup shredded cheese
Directions:
Preheat oven to 375°F. Wrap tortillas in a paper towel and microwave for 30 seconds on high. Unwrap tortillas and drape over two bars of the oven rack and bake until crisp, 7-10 minutes. Carefully remove shells from oven rack, repeat with remaining tortillas. In a large skillet, sauté the butter, onion, and apple for 3 minutes. Add turkey meat and cook until meat is brown. Add taco seasoning, tomatoes, and water. Simmer for 10-15 minutes. Remove the meat mixture from the stove and begin to assemble the tacos. Spoon 2-3 Tbsp. meat into shells, add lettuce and cheese.
This will feed a family of four – two tacos a piece. Remaining corn tortillas can be made into chips by frying them in oil. Remaining taco meat can be frozen. Or all remaining ingredients may be used later in the week for a taco salad or taco casserole.
