Granola

 

Makes 3 ½ cups

Ingredients:
2 Tbsp butter (optional – alternative line pan with parchment paper)
1 ¾ cups old-fashioned rolled oats
½ cup slivered almonds
½ cup shredded coconut
¼ cup of pumpkin seeds or sunflower seeds
3 Tbsp maple syrup
1 Tbsp vegetable oil
1 Tbsp warm water
1/8 tsp salt
Dried Fruit of your choice
¼ cup apricots, diced
1 cup cranberries
¼ cup dates, diced
1 cup of raisins

Directions:

  1. Pre-heat oven 300°
  2. Line a rimmed baking sheet with parchment paper or grease sheet with butter
  3. In a large bowl mix first 4 dry ingredients (oats, nuts, coconut, seeds)
  4. In a small bowl mix syrup, oil, water and salt.
  5. Pour syrup mixture over the oat mixture
  6. Stir to combine
  7. Spread the mixture evenly over the prepared baking sheet.
  8. Bake for 45 minutes, stirring every 10 minutes
  9. Granola should be evenly toasted
  10. Transfer the pan to a cooling rack.
  11. When Granola is cool transfer to a large bowl.
  12. Stir in the dried fruit of choice.
  13. Use for breakfast parfait or serve with milk as a cereal.
  14. Store any leftover in an airtight container.
