Granola
Granola
Makes 3 ½ cups
Ingredients:
2 Tbsp butter (optional – alternative line pan with parchment paper)
1 ¾ cups old-fashioned rolled oats
½ cup slivered almonds
½ cup shredded coconut
¼ cup of pumpkin seeds or sunflower seeds
3 Tbsp maple syrup
1 Tbsp vegetable oil
1 Tbsp warm water
1/8 tsp salt
Dried Fruit of your choice
¼ cup apricots, diced
1 cup cranberries
¼ cup dates, diced
1 cup of raisins
Directions:
- Pre-heat oven 300°
- Line a rimmed baking sheet with parchment paper or grease sheet with butter
- In a large bowl mix first 4 dry ingredients (oats, nuts, coconut, seeds)
- In a small bowl mix syrup, oil, water and salt.
- Pour syrup mixture over the oat mixture
- Stir to combine
- Spread the mixture evenly over the prepared baking sheet.
- Bake for 45 minutes, stirring every 10 minutes
- Granola should be evenly toasted
- Transfer the pan to a cooling rack.
- When Granola is cool transfer to a large bowl.
- Stir in the dried fruit of choice.
- Use for breakfast parfait or serve with milk as a cereal.
- Store any leftover in an airtight container.
