Overview

NEW 2011 - includes  whole grains, and no processed sugar
Teaching curriculum includes true basics such as roasted chicken and vegetables, pasta sauce from scratch, fruit desserts, turkey tacos, and more. Participants will learn to prepare traditional entrees that are tasty and nutritious. As always there will be a focus on seasonal ingredients so participants prepare vegetables and fruit every day.  This is our first curriculum that features whole grains, without processed sugar and as always lower fat and lower salt recipes.

By the end of the week, participants will have covered basic food preparation, reading recipes, cooking, and cleanup. The camp also incorporates food safety, knife safety, shopping concepts, and setting a table. Participants learn cooking techniques and terminology such as browning, sautéing, baking a fruit crisp, preparing pasta and much more.

The course is divided into 5 days over one week as part of summer camp program. The classes are:
1. Let’s Make Salad Entrée
Students will learn basic cooking techniques for making a salad entree. Lesson begins with kitchen safety and knife skills.

2. It’s not just a Hamburger
Participants will prepare a menu using ground meat and a French onion sauce. Lesson begins with food safety.

3. Everyone likes Pasta
Participants will learn the simplicity of cooking with pasta and how to make two basic summer sauces. Class begins with a grocery shopping lesson.

4. Basic Roasted Meal
Participants learn how to prepare roasted chicken and vegetables for a complete menu. The lesson reviews the most common food allergens.

5. Mexican Fiesta - Celebration
Students celebrate the completion of class and prepare traditional Mexican style menu.
