Teaching curriculum includes: portion control, diets governed by health conditions such as glucose and lactose intolerance or diabetes, and other special diets such as vegan and vegetarian. Organizations can now run this course whether they have a kitchen or not.

Health and Nutrition

Students should be aware of special dietary needs, whether their own, family members, or friends. 

  1. Gluten-free diet

    Students will learn about gluten intolerance, key tips, hints, and how to identify gluten in commercial products.  They will look at alternatives to common wheat-based products such as noodles, tortillas, breads without gluten.  They will prepare a gluten-free menu.

  2. Lactose-free diet

    Students will learn the definition of lactose. They will review dairy-free alternatives and prepare a lactose-free menu.

  3. Diabetes

    Students will learn about the two types of diabetes. Class material includes a review of glucose and Glycemic index. They will consider alternative sweeteners and prepare a diabetic-friendly menu.

  4. Heart Healthy

    Students will learn the influence of fat and salt as it relates to heart healthy diets. They will prepare a heart healthy menu.

  5. Food Allergies

    Students will learn about the most common food allergies besides some that have been discussed earlier in the course. They will prepare a simple menu.

  6. Vegetarian/Vegan

    Students will learn the difference between vegan and vegetarian diets. They will review why people choose these diets over a healthy omnivore diet. They will also review the importance of protein in a diet and key ways to ensure a diet consists of enough protein. They will prepare a vegan menu.
